I don’t think I mentioned it but, I am back on my low carb/keto diet for this year. I did it pretty much all throughout 2019 and I did really really well on it. Then came 2020… I tried to stick to it, but halfway throughout the year that was pretty much thrown out the window. I decided to commit to it again this year since I felt so good while doing it in 2019.

One of the things I make myself for breakfast are these low carb chocolate protein waffles. They are super easy to make, and if you like warm, sweet meals then this is perfect. You can even make this in a mug in the microwave (90sec). I used to make it like this all the time but with the waffle maker, it cooks more evenly.

I eat them fresh out of the waffle maker, plain, but you could add some whipped cream and strawberries if you would like. That would even make a nice dessert style treat!

I use the Sunwarrior chocolate protein. It’s a really good, non-gmo, keto, and plant based protein. I also use this in my smoothies and definitely recommend it if you are looking for a good quality protein powder.

Low Carb Chocolate Protein Waffles

Ingredients:

  • scoop chocolate protein powder
  • 1 tbsp cacao powder
  • 1 tbsp ground flax seed
  • 1-2 tbsp chocolate chips (I use Lilly’s Baking Chips)
  • 1 tsp almond flour
  • 1 egg
  • 1/4 cup coconut milk

Mix the dry ingredients first, then mix in the wet. Pour into your waffle maker. I used the Dash mini waffle maker (makes 3).
